Well Dear Reader, what have you been up to this summer? It's already half over! I have been to Ottawa for a few days. I went to a driving range for the first time. I've been making my way through Ruth Reichl's books. I have been soaking up the sun in my backyard (although my legs still look like two pints of milk) while reading magazines and enjoying a glass of wine....or two. Ah summer! So what does one do with a glut of ripe peaches? This. An easy Summer Fruit Tart....simple ingredients that came together with wonderful results. I had some puff pastry in the freezer that could do with being used up. Aha! An idea....... I sliced up eight peaches and tossed them with a tablespoon of sugar. I laid the two pieces of (pre-rolled!) puff pastry on a baking sheet lined with parchment paper. I folded over the edges and crimped the corners. I divided the sliced peaches between the two and spread them out evenly. I drizzled a little bit of honey over the top. I popped it into the oven preheated to 450 degrees and kept an eye on it for 25 minutes until it was golden brown. While it was baking, I prepared the whipped cream. I poured one cup of whipping cream into a bowl and beat it with a whisk until it started to thicken (you can use an electric mixer of course....I just didn't feel like cleaning it up afterwards) When it started to thicken I added one teaspoon of vanilla and one tablespoon of sugar and continued to work my arm out with the whisk. That was quite a workout, Dear Reader....washing the beater and bowl would have been easier! If you don't need the workout, ice cream would be great with it too!

Thanks Christine! I have been working on my photography.....I'm hoping to be taking pics of mountains in Alberta next summer..!!! :)
